Chocolate Marshmallow Cookies

Delicious and simple! These gooey, chocolaty cookies are sure to become a family favorite!
Servings 4 dozen

Equipment

  • 1 Cup Shortening
  • 1/2 Cup Cocoa Powder
  • 2 Cups Sugar
  • 2 Eggs
  • 1/2 Cup Milk
  • 2 tsp. Vanilla
  • 3 Cups Flour
  • 1/2 tsp. Salt
  • 2 tsp. Baking Powder
  • 24 Large Marshmallows Cut in half
  • Chocolate Frosting

Instructions
 

  • Preheat the oven to 375 degrees.
  • Cream together shortening and cocoa powder.
  • Add sugar, eggs, milk, and vanilla. Mix well.
  • In a separate bowl, stir together dry ingredients.
  • Add dry ingredients a little at a time and mix until thoroughly combined.
  • Let the dough rest for 10 minutes.
  • Drop about 2 tablespoons using a cookie scoop onto a greased cookie sheet.
  • Bake for 7 minutes.
  • Remove from the oven and top each cookie with half of a large marshmallow.
  • Return to the oven and bake for one more minute.
  • Allow cookies to cool.
  • Once cool, frost with chocolate frosting(or enjoy without the frosting).

Notes

This recipe makes approximately 4 dozen cookies.
Store the cookies in an air-tight container. I usually frost them as needed, and not all at once because it's easier to store unfrosted cookies in a ziplock bag or Tupperware.
You can freeze these cookies BEFORE frosting them in a ziplock freezer bag if you wish.
