Cozy Chicken Pot Pie Soup Recipe

Ingredients
  

  • 1 Tbls olive oil
  • 1 onion finely chopped
  • 2 2 carrots diced
  • 2 2 ribs celery diced
  • 1 pound potatoes diced
  • 1 tsp dried thyme leaves
  • 1 bay leaf
  • 4 cups chicken broth
  • 4 Tbps butter
  • 4 Tbps all-purpose flour
  • 2 cups cooked chicken(diced)
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • salt and black pepper

Instructions
 

  • Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for 5-7 minutes, or until the vegetables are softened and the onion becomes translucent. Stir occasionally to prevent burning.
  • Add the diced potatoes and dried thyme leaves and bay leaf to the pot. Stir everything together, then pour in the 4 cups of chicken broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes, or until the potatoes are tender when pierced with a fork.
  • While the vegetables are simmering, melt 4 tablespoons of butter in a separate saucepan over medium heat. Once melted, whisk in the 4 tablespoons of flour. Stir constantly for 1-2 minutes to create a smooth, bubbly paste. This is your roux. Slowly add about 1 cup of the hot broth from the soup into the roux, whisking continuously to prevent lumps. Once combined, stir this roux mixture back into the soup pot.
  • Stir in the 2 cups of diced cooked chicken and 1 cup of frozen peas. Continue to cook the soup for an additional 5-7 minutes, allowing the peas to heat through and the soup to thicken.
  • Reduce the heat to low and slowly add the 1/2 cup of heavy cream to the soup. Stir well to combine. Taste and adjust the seasoning with salt and freshly ground black pepper to your liking. Remove the bay leaf before serving.
  • If serving with puff pastry, preheat your oven and bake according to package instructions until golden and flaky. You can cut the pastry into squares or circles to serve alongside the soup, or place it on top of the soup for a "crust" effect.
  • Ladle the soup into bowls, top with a piece of puff pastry, and enjoy! This comforting soup is perfect for cozy dinners and will be sure to warm you up on chilly days.
