- 1 head of broccoli, chopped
- 1 large carrot, grated
- 1 cup heavy cream
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 2⅓ cups vegetable or chicken broth
- 1 potato, diced
- salt and pepper to taste
In a large pot, melt the butter over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant.
Stir in the heavy cream and bring it to a gentle simmer.
Add the vegetable or chicken broth and continue to simmer.
Toss in the chopped broccoli, grated carrot, and diced potato. Cook for 25-30 minutes, or until the veggies are soft and tender.
Once everything is cooked through, stir in the shredded cheddar cheese until it’s completely melted and smooth.
