Mint Chocolate Brownies Recipe

Easy and delicious! These mint chocolate brownies are going to be your new favorite dessert!

Ingredients
  

For the brownies

  • 1 cup butter
  • 1 cup semi-sweet chocolate chips
  • cups sugar
  • 1/2 cup brown sugar
  • 4 eggs
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 3/4 cup flour
  • 1/4 cup cocoa powder

For the frosting

  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 2 Tbls milk
  • 2 tsp peppermint (or mint) extract
  • Green food coloring (a few drops, optional)
  • Chopped chocolate chips, sprinkles, or Ande’s candies for decoration (optional)

Instructions
 

Prepare the brownies

  • Preheat your oven to 350°F (175°C). Line or spray a 13x9-inch baking dish and set it aside.
  • In a medium microwave-safe bowl, combine the butter and chocolate chips. Heat in 30-second intervals, stirring well after each, until melted and smooth.
  • Stir in the sugar and brown sugar until fully combined.
  • Add the eggs and whisk thoroughly. Stir in the vanilla extract.
  • Gently fold in the flour, cocoa powder, and salt until just combined.
  • Pour the brownie batter into the prepared pan and spread it evenly.
  • Bake for 25-30 minutes, or until the center is set. Allow the brownies to cool completely before adding the frosting.

Make the mint frosting

  • In the bowl of a stand mixer, combine the softened butter, powdered sugar, milk, peppermint extract, and a couple of drops of green food coloring.
  • Using the paddle attachment, mix on low speed until combined, then increase to medium speed and beat for about a minute until light and fluffy.
  • Scrape down the sides of the bowl and mix again to ensure everything is well incorporated.

Frost and decorate

  • Once the brownies are completely cool, spread the mint frosting evenly over the top.
  • For extra flair, sprinkle with chopped chocolate chips, festive sprinkles, or crushed Ande’s candies if desired.
