- 1 Cups crisp cookies of your choice (coconut cookies for a sweet twist or honey graham crackers for a classic flavor)
- 1/2 Cup butter(melted)
- 1 Cup powdered sugar
- 3 Packages Philadelphia cream cheese (softened) 8oz each
- 1 Cup heavy whipping cream
- 1 ½ Cups strawberries (fresh, for topping and garnish)
- 1 Package strawberry gelatin(3 oz)
Step 1: Make the Crust
Place your cookies in a sturdy plastic bag and crush them with a rolling pin until finely ground. (Alternatively, you can use a food processor.)
Melt the butter in a small saucepan over low heat. Stir the crushed cookies into the melted butter until well combined.
Press the cookie mixture firmly into the bottom of an 8-inch springform pan to create an even crust. Refrigerate for 20 minutes to allow it to set.
Step 2: Prepare the Cheesecake Filling
