How to Make Chicken Pot Pie Soup

This chicken pot pie soup is as simple as it is delicious. Here’s a general overview of how to make it:

  1. Start with the Veggies: Sauté onion, carrots, and celery in olive oil until softened and fragrant. Add the diced potatoes and dried thyme and bay leaf, then pour in the chicken broth. Let everything simmer until the potatoes are tender.
  2. Make the Roux: In a separate saucepan, melt the butter and whisk in the flour. Cook for a minute to eliminate the raw flour taste, then slowly whisk in some of the broth from the soup to create a thick, smooth mixture. Stir this back into the pot to thicken the soup.
  3. Add the Good Stuff: Stir in the cooked chicken, frozen peas, and heavy cream. Simmer until everything is heated through. Season with salt and freshly ground black pepper to taste.
  4. Cook the Puff Pastry: If using puff pastry, cut it into squares or circles and bake according to the package instructions until golden and flaky. Serve alongside the soup for dipping or place it on top for a “crust” effect.
  5. Serve and Enjoy: Ladle the soup into bowls and pair it with the puff pastry for the ultimate comfort meal.

Tips for Success

  • Customize It: Swap out the chicken for turkey or add extra veggies like corn or mushrooms for a twist.
  • Storage: This soup keeps well in the fridge for up to three days. Reheat gently to maintain its creamy texture.
  • Make It Lighter: Substitute half-and-half for the heavy cream if you’d like a lighter version.
  • Make It Extra Special: If you’re feeling fancy, sprinkle the puff pastry with a little grated Parmesan or herbs before baking for added flavor.

This chicken pot pie soup is everything you love about the classic dish, made simple and satisfying. Whether it’s a chilly evening or you’re just craving something cozy, this recipe will warm you from the inside out. Don’t forget the puff pastry for an extra touch of pot pie magic!

Ingredients

  • 1 Tbls olive oil
  • 1 onion finely chopped
  • 2 2 carrots diced
  • 2 2 ribs celery diced
  • 1 pound potatoes diced
  • 1 tsp dried thyme leaves
  • 1 bay leaf
  • 4 cups chicken broth
  • 4 Tbps butter
  • 4 Tbps all-purpose flour
  • 2 cups cooked chicken(diced)
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • salt and black pepper

Instructions

  • Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for 5-7 minutes, or until the vegetables are softened and the onion becomes translucent. Stir occasionally to prevent burning.
  • Add the diced potatoes and dried thyme leaves and bay leaf to the pot. Stir everything together, then pour in the 4 cups of chicken broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes, or until the potatoes are tender when pierced with a fork.
  • While the vegetables are simmering, melt 4 tablespoons of butter in a separate saucepan over medium heat. Once melted, whisk in the 4 tablespoons of flour. Stir constantly for 1-2 minutes to create a smooth, bubbly paste. This is your roux. Slowly add about 1 cup of the hot broth from the soup into the roux, whisking continuously to prevent lumps. Once combined, stir this roux mixture back into the soup pot.
  • Stir in the 2 cups of diced cooked chicken and 1 cup of frozen peas. Continue to cook the soup for an additional 5-7 minutes, allowing the peas to heat through and the soup to thicken.
  • Reduce the heat to low and slowly add the 1/2 cup of heavy cream to the soup. Stir well to combine. Taste and adjust the seasoning with salt and freshly ground black pepper to your liking. Remove the bay leaf before serving.
  • If serving with puff pastry, preheat your oven and bake according to package instructions until golden and flaky. You can cut the pastry into squares or circles to serve alongside the soup, or place it on top of the soup for a "crust" effect.
  • Ladle the soup into bowls, top with a piece of puff pastry, and enjoy! This comforting soup is perfect for cozy dinners and will be sure to warm you up on chilly days.
