I just visited Disneyland park to kick off the Holiday season! I had such a great time and I ate so much food. The Ice Cream Cookie Sandwich from Gibson Girl Ice Cream Parlor was by far my favorite thing I tried! I tried a lot of treats. I really did. I was so full that I almost skipped out on the Ice Cream Cookie Sandwich, but something told me to try it. I’m so glad that I did! I was blown away by how delicious it was and it’s my new favorite holiday treat at the Disneyland Resort!

Disneyland park and Disney California Adventure Park are both full of delicious desserts this time of year. There’s the Mickey Mouse holiday apple, hand-pulled candy canes, caramel apple churro, and peppermint hot cocoa. Just to name a few. Anyone with a sweet tooth will be heaven during the holiday season at Disneyland.

The Ice Cream Cookie Sandwich from Gibson Girl Ice Cream Parlor(located on Main Street) is cinnamon brown sugar ice cream between oatmeal raisin cookies. This ice cream cookie sandwich is huge and can easily be shared. It costs $6.99 and you can mobile order it. It’s available Nov. 11- Jan. 8th, 2023.

I love this holiday ice cream cookie sandwich so much, I decided I had to recreate it so that I could enjoy it at home! This recipe is simple, delicious, and adaptable(as all great recipes are). Feel free to leave out the raisins or substitute them with chocolate chips or whatever you like. No matter what, they will be amazing and I know you will love them!

I hope you’ll try these ice cream sandwiches and adapt them to fit your liking. I wanted to keep this recipe simple, so I opted to jazz up some store-bought ice cream instead of trying to make homemade ice cream. I like to keep things simple whenever possible. My family doesn’t love raisins, so I’ll probably just do oatmeal cookies next time.

Ice Cream Cookie Sandwich Ingredients

For the Cookies:

  • 1 cup butter (room temperature)
  • 1 cup  Brown Sugar
  • 1/2 cup white sugar
  • 2  eggs
  • 2 tbsp  Molasses
  • 1 1/2 cups  flour
  • 3 cups rolled oats(not quick oats)
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 tsp cornstarch

For the Ice Cream:

  • 1 container vanilla ice cream(48 fl oz)
  • 1 tbsp molasses
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • toffee bits or milk chocolate chips for garnish

Making The Brown Sugar Ice Cream

  1. Soften your vanilla ice cream until it’s easy to work with.
  2. Spoon your ice cream into a large mixing bowl and add molasses, brown sugar, and cinnamon.
  3. Using a hand mixer, or a large spoon stir until completely combined. I like to use a mixer because it helps the brown sugar dissolve a bit more quickly.
  4. Return Ice Cream to the freezer until ready to use.

Making the Oatmeal Raisin Cookies

  1. Combine flour, oats, cinnamon, baking soda, salt, and cornstarch. Mix well and set aside.
  2. In a large bowl cream together butter and both sugars until well combined.
  3. Add eggs and molasses and beat until fluffy.
  4. Add the dry ingredients a little at a time until just fully incorporated. Do not over-mix.
  5. Add raisins or chocolate chips(if using).
  6. Cover cookie sheets in parchment paper(don’t skip this step or your cookies may be flat!)
  7. Roll large balls of cookie dough(4 tablespoons each) and place on cookie sheet. Place no more than 4-6 cookies on a sheet. They will spread when baking.
  8. Let cookie dough balls rest in the fridge for at least an hour or longer. Don’t skip this step! It’s important.
  9. Preheat oven to 375 degrees.
  10. Bake cookies for 12-13 minutes or until the edges are golden brown. If the cookie is still a little round when they are done, just press it down a bit with the back of a spoon. It’s ok for the cookies to be a bit doughy when you first pull them out of the oven. They will continue to bake a bit on the pan as they are cooling. Move them to a cooling rack to finish cooling once they’ve set up completely.
  11. Allow cookies to cool completely before assembling the ice cream cookie sandwiches.

Assembling the Ice Cream Cookie Sandwiches

  1. Pull out the ice cream and allow it to soften on the counter for a bit.
  2. Place a single scoop of ice cream on one of the oatmeal cookies. Use a knife to spread it evenly around.
  3. Put a second oatmeal cookie on top of the ice cream.
  4. Roll the edges of the ice cream in toffee bits or chocolate chips.
  5. Enjoy the ice cream cookie sandwiches right away, or place them in the freezer to harden up a bit before serving.
  6. Store leftover ice cream cookie sandwiches in an airtight container or Ziploc bag in the freezer.

Inspired by the Disneyland Ice Cream Cookie Sandwich. Oatmeal cookies filled with cinnamon brown sugar ice cream and rolled in toffee bits. Simple, easy and so delicious!

Ingredients
