Mickey churro Cookies are now at Disneyland and I’m pretty excited! Have you ever had a Disney park churro? They’re pretty amazing. I especially love the specially holiday churros. They have all kinds of varieties that go along with the corresponding holidays. Pumpkin spice for Halloween, peppermint for the holidays and bunches of other flavors that call my name every time I’m visiting. You can find churros throughout Disneyland at different food carts(check your Disney app for specific locations). If you’re heading to the parks soon, make sure you buy your tickets at a discount! I was pretty excited when I saw that Disneyland has released Mickey Churro Cookies for the Halloween season! Did I mention, I love cookies? Who doesn’t? Well, Disneyland basically made all my dreams come true by combining two of my very favorite things, cookies and churros. Just like that, Mickey Churro Cookies were born and I realized I need to recreate this recipe so I could enjoy them at home year round. Costco might miss me, but Churro Cookies beat a Costco churro everyday of the week and twice on Sundays.
My Mickey Churro Cookies recipe is simple. I prefer a soft sugar cookie. So, I took my famous secret ingredient sugar cookie recipe and tweaked it just a bit to turn it into a churro sugar cookie recipe. Then, I added a swirl of brown sugar cinnamon butter cream, a sprinkle of sugar on the top and boom: Mickey Churro Cookies. I did use my favorite Mickey Mouse Cookie Cutter, but you can use any cookie cutter you like. I do have to tell you that cookies taste better when they’re Mickey shaped, but you probably already knew that.

I topped my cookies with some sanding sugar mixed with a little cinnamon. This gives them just the right amount of sparkle. For some reason, cookies taste better with sprinkles. You can find sanding sugar at most grocery stores on on Amazon here.
