Missing Disneyland? No worries! This will help. Disneyland’s Matterhorn Macaroon copycat recipe is the perfect way to bring some Disney magic to your home when you can’t be in the parks. The Matterhorn Macaroon may be one of the most iconic treats in the park. It’s inspired by the Matterhorn bobsleds. One of the most iconic rides in the park. You can find them at the Jolly Holiday Bakery Cafe on Main Street at the Disneyland Resort. Have you been here? It’s such a magical place! They are the only place at Disneyland to get a Matterhorn Macaroon. Because they are one of my favorite treats, I decided to make them part of my Disneyland food series.

Now, you can make them at home! This delicious recipe is so simple to make and will whisk you right back to the chilly tops of the Matterhorn in no time. It’s perfect for Disney fans! Our park visit is not complete until we’ve had a Matterhorn Macaroon! I have been first in line at the Jolly Holiday Bakery on Main Street U.S.A. in Disneyland many times to snag one of these delightful treats. I’m so excited to bring you this recipe so you can enjoy a little Disney magic at home! In this recipe, I use a food processor to grind up the coconut into smaller pieces. Although I recommend it, this is not a necessary step. Feel free to skip it if you don’t have a food processor. Your final product will look a little different, but the taste will be the same and that’s what really matters!

Disneyland’s Matterhorn Macaroon CopyCat Recipe Ingredients

  • 4 egg whites
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 teaspoon salt
  • 1 1/2 cup unsweetened coconut
  • 1 1/4 cup white sugar
  • 1 4oz bar premium baking white chocolate

Disneyland’s Matterhorn Macaroon CopyCat Recipe Directions

  1. Grind unsweetened coconut in your food processor. You can skip this step if you don’t have a food processor. The look of the macaroon will be a bit different than mine, but the taste will be the same.
  2. In a large bowl, beat egg whites, vanilla, almond extract and salt with a hand mixer. Add remaining ingredients and beat until well blended.
  3. Cook mixture in a large saucepan over medium heat for 5-6 minutes, stirring constantly. Remove dough from pan and place in a separate bowl to cool.
  4. Heat oven to 350 degrees.
  5. Line a baking sheet with parchment paper. Scoop about 2-3 Tablespoons of the dough into rounds and place about 1 inch apart on the cookie sheet. Using damp fingers, shape the dough into little mountains. Little Matterhorn mounds, if you will. Disneyland makes their Matterhorn Macaroons quite tall, but I opted to keep mine short for a smaller cookie.
  6. Bake for 18-20 minutes or until the edges and top are golden brown. Cool completely.
  7. Grate a small amount of the chocolate bar with a fine grater and set aside. This will be the “snowflakes” on the top.
  8. Melt remaining chocolate in a microwave safe bowl for 30 second increments, stirring in between until the chocolate is just melted.
  9. Dip the tops of the cookies into the melted white chocolate and sprinkle with a small amount of the grated white chocolate.

Enjoy a little piece of Disneyland's most beloved treat, right at home! Makes about 16 Macaroons.

Ingredients
  

  • 4 Egg Whites
  • 1 tsp Vanilla
  • 1 tsp Almond extract
  • 1/2 tsp Salt
  • 2 1/2 Cup Unsweetened coconut Ground in food processor(if desired)
  • 1 1/4 Cup Sugar
  • 1 4oz bar Premium Baking White Chocolate Ghirardelli or Lindt are good choices
